Sweet Potato & Egg Scramble

Whisk the egg in a bowl.
In a non-stick pan, add coconut oil and scramble the egg over medium heat.
Once the egg is nearly cooked, stir in the mashed sweet potato.
Mix well until combined and warm.
Let it cool and serve as a topper for regular meals.
Storage
Best served fresh. Can be refrigerated for 24 hours.
