Peanut Butter & Pumpkin Training Bites

Ingredients
- 1 cup Pureed Pumpkin (steamed and mashed, no sugar)
- 1/2 cup Xylitol-free Peanut Butter (check the label twice!)
- 2 large Eggs
- 2.5 cups Oat Flour (you can just grind rolled oats in a mixer)
- 1/2 tsp Cinnamon (optional, for that great bakery smell)

Shiro's Method
Preheat your oven to 175°C. Line a baking sheet with parchment paper.
In a large bowl, whisk the pumpkin, peanut butter, and eggs until creamy. Shiro usually 'assists' by cleaning the whisk.
Gradually fold in the oat flour and cinnamon. The dough should be thick and slightly tacky, not sticky.
Roll into tiny balls (size of a chickpea for training) or use a small cookie cutter.
Bake for 15-20 minutes. For 'soft' bites (best for training), keep it to 15. For 'crunchy' cookies, go for 22.
Let them cool completely on a wire rack before bagging them up.
Storage
Store in an airtight container in the fridge for up to 1 week, or freeze for 3 months.
